Sean Enright from Tiki Lounge in Pittsburgh, USA, explores the darker sides of faux tropical with a multi-layered, bourbon-beer tiki twist. 美國(guó)匹茨堡Tiki Lounge的Sean Enright用(yòng)一款层次丰富的波本-啤酒改编发掘出提基在热带风情之外的黑暗一面。

这个名字源于从前我和朋友们的一次尝试:找个词形容一群身着哥(gē)特式风格服装的女孩。我觉得谋杀案——就像是那部電(diàn)影《乌鸦谋杀案》一样——这个词恰如其分(fēn)。几年后,我在制作这款鸡尾酒时发现这个名字很(hěn)搭。它有(yǒu)点甜,有(yǒu)点苦,同时呈现出非常黑暗的形象。

我最初就想突破提基的定义,并且使用(yòng)波本威士忌作為(wèi)基酒。其他(tā)一切则是水到渠成,最终造就了一款偏离传统的提基鸡尾酒。尽管如此,我感觉它的风味构成仍然属于提基的范畴。我加入了杏仁糖浆和苦精,把它做成一款老式风格的鸡尾酒,然后添加了一些水果以实现我想要的热带风味。我添加了Don’s混合糖浆,里面有(yǒu)一些水果和提基香料——配方来自Jeff “Beachbum” Berry所著的《加勒比之饮》。杏仁糖浆与Don’s混合糖浆的醇厚口感与波本威士忌平衡,而雅凡娜、苦精和健力士的苦味则很(hěn)好地中和了糖浆的甘甜。雅凡娜和健力士的甜味相得益彰,非常适合用(yòng)于调酒,同时為(wèi)这款鸡尾酒增添了一丝宜人的苦味,又(yòu)没有(yǒu)喧宾夺主。分(fēn)层是在我第一次试验后加入的。这款酒本来在视觉上很(hěn)不起眼,不过经原料分(fēn)层之后,原本毫无惊艳视觉效果的鸡尾酒顿时变成了一款赏心悦目的杰作。

每每遇到调酒师新(xīn)手,我都会向他(tā)们灌输经典鸡尾酒的重要性。在他(tā)们开始尝试调酒或创新(xīn)之前,我怎么强调这些经典之作的重要性都不為(wèi)过。哥(gē)特妞谋杀案是基于老式鸡尾酒的一款提基改编,我只不过在其中添加了更多(duō)的风味层次。经典之所以成為(wèi)经典自有(yǒu)其原因,年轻调酒师把经典当作模板可(kě)以有(yǒu)机会更好地了解平衡与技法。

The name is derived from an old attempt among friends to categorise a group of girls dressed in goth clothing. I thought a murder – like a murder of crows – was the most appropriate. Years later, I found the name befitting of this drink. It has a little sweetness, and a little bitterness and a very dark persona.

I wanted to push the definition of tiki right from the start and used bourbon as my base. Everything else just fell into place, veering it away from traditional tiki. Still, I feel the flavour components are within the category. I added orgeat and bitters to move into an Old Fashioned-type drink, but then wanted some fruit to bring on the tropical notes I was looking for. I added Don’s Mix for some fruit and tiki spice – the recipe comes from Jeff “Beachbum” Berry’s bookPotions of the Caribbean. The orgeat and Don’s Mix mellow out the bourbon, while the Averna, bitters and Guinness have the bitter notes to balance out the sweetness of the syrups. Averna and Guinness have a complementary sweetness that makes them really easy to work with, both bringing a nice bitter addition to the drink without overpowering the flavour. The layering came after I did my first test run. Visually the drink was lacking, but with the layering of ingredients, it went from a lacklustre visual to a beautifully prepared masterpiece.

I’m always preaching the classics to new bartenders. I can’t impress on them enough the importance of knowing them before they start playing around or experimenting. A Murder of Goth Chicks started out as a tiki redesign of an Old Fashioned that I just layered more flavours onto. The classics are classic for a reason and using them as a template gives young bartenders an opportunity to better understand balance and technique.

A Murder of Goth Chicks / 哥(gē)特妞谋杀案

• 45ml 波本威士忌
• 22.5ml 雅凡娜阿玛罗
• 22.5ml Don’s混合糖浆*
• 7.5ml 杏仁糖浆
• 6滴 比特曼 Elemakule提基苦精
• 健力士漂浮

将阿玛罗倒入洛克杯。然后小(xiǎo)心加入一大块方冰,注意不要将阿玛罗溅起。将除健力士之外的所有(yǒu)原料加冰摇匀,缓缓双重滤入加了冰块的杯子里。最后加一层健力士漂浮,啤酒龙头要尽量靠近冰块。

*Don’s混合糖浆:2份西柚汁加1份肉桂单糖浆。**倒入密封容器冷藏备用(yòng)。

**肉桂单糖浆:200克糖,240毫升水;2英寸長(cháng)的肉桂皮。将所有(yǒu)原料全部放入平底锅。小(xiǎo)火加热5分(fēn)钟。静置一夜后过滤。倒入密封容器冷藏备用(yòng)。

• 45ml Bourbon
• 22.5ml Averna amaro
• 22.5ml Don’s Mix*
• 7.5ml Orgeat syrup
• 6ds Bittermens Elemakule Tiki bitters
• Guinness float

Pour amaro into a rocks glass. Then carefully add one large ice cube without disturbing the amaro. Shake other ingredients except Guinness over ice and double-strain slowly over the ice cube. Float the Guinness on top with a spigot as close to the ice cube as possible.

*Don’s Mix by Don the Beachcomber: Combine 2 parts grapefruit juice with 1 part cinnamon simple syrup.** Refrigerate in an airtight container until ready to use.

**Cinnamon simple syrup: 200g sugar; 240ml water; 2-inch piece of cinnamon bark. Combine ingredients in saucepan. Set over low heat for 5 minutes. Let stand overnight and then strain. Refrigerate in an airtight container until ready to use.
